Hmmm, I think I'd go a little lighter on the Cool Whip and not put the extra dollop on top. They obviously don't know that there's a limit on it of 2 T. per serving

Creamy Gelatin Layered Squares

Phase 1, 2, & 3
Prep Time: 20 min
Total Time: 4 hr 20 min
Makes: 9 servings

1-1/2 cups boiling water
1 pkg. (8-serving size) or 2 pkg. (4-serving size each) JELL-O Brand Lime Flavor Sugar Free Low Calorie Gelatin
ice cubes
1 cup cold water
1-1/2 cups thawed COOL WHIP LITE Whipped Topping, divided


Stir boiling water into gelatin in large bowl at least 2 minutes until completely dissolved. Add enough ice to cold water to measure 1-1/2 cups. Add to gelatin; stir until ice is completely melted. Refrigerate about 45 minutes or until gelatin is slightly thickened.

Remove 1-1/2 cups of the gelatin; set aside. Add 3/4 cup of the whipped topping to remaining gelatin; stir with wire whisk until well blended. Pour into 8-inch square dish. Refrigerate about 15 minutes until set but not firm. Carefully spoon reserved gelatin over creamy layer in dish.

Refrigerate 3 hours or until firm. Cut into 9 squares to serve. Top each serving with a dollop of the remaining whipped topping.

I've made a version of this that is similar but much easier to make...

Basically, prepare any flavour of Jello using the quick-set method and stir in a certain quantity of Cool Whip (I think it was 1 cup).

Pour into dessert glasses and chill. As the mixture chills, it was separate on its own, with the gelatin part on the bottom and the foamy, flavoured part on top.

I've made this in several flavours, one of my favs is lime presented in martini glasses with a teensie dollop of cool whip, 1 mint leaf and a strip of lemon zest for garnish. Very pretty, elegant presentation of an otherwise humble (but allowable!) dessert.
