| This is definately a dessert and it was posted in the dressings/snacks forum, so I copied it to the dessert forum. I just had it last night! Heavenly!! Coconut Flavored Flan Serves 4 1 cup part-skim ricotta cheese 1 cup skim milk 4 eggs or 1 cup egg substitute 1 tsp. each vanilla, coconut extract 1/3 cup Splenda or to taste 2 Tbs. sugar-free maple syrup Pre-heat oven to 350 F. In a blender mix together all ingredients, except the maple syrup. Spray 4 custard dishes with cooking spray. Divide the maple syrup among the custard dishes. Divide the flan mixture also among the custard dishes. Place about 3 " of warm water in an 8x8 baking dish. Place the custard dishes in the water bath. Place baking dish with custard dishes in oven. Bake for 40 minutes or until a knife comes clean when introduced to a custard. Remove from oven and let cool on a rack. Serve warm or cold with a spoonful of the sf maple syrup on top of the flan. Some like it with rum extract in the mix too . I don't make it this way. | ||||||||||
