Default The One Minute Muffin

1/4 cup of flaxseed meal
1 egg
1 tablespoon margarine
1/4 teaspoon baking powder

Take a Pyrex one-cup measuring cup (or a tea cup or a coffee mug) and put the margarine in it. Cover with half a paper towel and microwave for 15 seconds to melt it.
Add the flax meal
Add the egg
Add the baking powder
Beat it all up with a fork

Add whatever sweetner you'd like (I like to use the sugar-free Davinci syrups and Splenda, or Splenda and cinnamon). Then, microwave it for 1 minute. Turn it out of the cup onto a plate and enjoy!

This is especially good with Davinci sugar-free pancake syrup. Tastes JUST like french toast with syrup to me.

Sounds good! Do you happen to have the calorie and fat count for that? I'd love to eat it if it doesn't kill me with calories.

I ate flax alot on Atkins and on SB I know you can have up to 3 tablespoons per day but each tablespoon is equivelant to a serving of fat because of the high fat content.

Oh it sounds good. The fiber alone should be good for you. Thanks Ruben, I have some flax seeds in the refrig, I can make it in the morning.

i made this, it was good! put sugarfree syrup on it.

is it only 2 tablespoons of flax meal that is allowed per serving?

Just out of curiosity, I looked it up on the SBD web site and the SBD Nutritionist says that 3 Tablespoons of flax seed meal is equal to one serving of fat.

Yay! :happy: More flax meal and more omega 3's!
