Oatmeal Pancakes
All Phases....1 serving.....280 cal, 27 protein, 32 carb, 4.5 fat (1 sat fat) 10 mg chol, 4 g fiber, 460 sodium.
1/2 cup of old-fashioned oatmeal
1/4 cup of low-fat cottage cheese (or tofu could be used)
4 egg whites
1 tsp vanilla extract
1/4 tsp ground cinnamon and nutmeg each
Low sugar syrup (optional)
In a blender process the oatmeal and cottage cheese, egg whiles and vanilla and spices until smooth.
Coat a nonstick skillet with cooking spray. Add the batter and cook over med heat until both sides are brown.
