Default Sugar free fudge

16 ozs low fat or fat free cream cheese
2 unsweetened chocolate squares melted and cooled
1/2 c splenda
1 tsp vanilla extract
1/2 c chopped pecans

In a small mixing bowl, beat the cream cheese, chocolate, splenda, and vanilla until smooth. Pour into 8 inch square pan lined with foil. Cover and refridgerate overnught. Cut into 16 squares and serve.


Has anyone else tried fudge made with cream cheese? If so, is it any good?

I haven't tried it, but it looks like it could mean trouble for me! Do you know what the nutritional values are for this, offhand?

I'm just afraid I would have trouble with portion control if this recipe is as good as it sounds. I might make it on a special occasion though and give any extras away.

Are you going to try it, Bonniejo?

Luv, I can't seem to find the nutritional info on it. Found one using reg. cream cheese, but thats it. With that recipe, it was 147 calories, total fat5g, Carb 31 mg, Cholesterol 84 mg, Sodium 3 g. With this headache I have I can't seem to figure out what it would be with fat free cream cheese. lol:Sarcastic:

I'll see if I can find it out and enter it later on. I'll just record every ingredient in Fitday and divide those numbers by 16 and that should give me the correct info per piece.

I hope your headache goes away soon. :Sympathy: That's sure no fun.

Okay, I entered all the ingredients into Fitday and used a low fat cream cheese as an ingredient. This is what I came up with for nutritional info per piece. Of course, fat free can be used and it will lower some of the stats per piece.

120 calories
4,25 net carbs
10 grams of fat
4 grams protein

Judging from stuff in it, you could enjoy (maybe 1) on phase 1...your allowed what? 2 TBS low fat/ff cream cheese, and everything else is ok, (other than the huge amount of artificial sweetener..which make it good I'm sure...lol) so I don't see why 1 would hurt on phase 1...that's just my opinion though...

Here's a tip....cut them into very small pieces...enjoy them slowly...savor it...and be strict enough in your willpower to only have 1 for the occasional treat...you should be fine.
