What is this 'Bean Cake' I have heard referred to a couple times?

I am so sorry. I just saw your post.

Does this look like what you were asking about? I've seen some other versions. But I believe this is the basic recipe. I've seen where people have added coffee and chopped nuts. Or chocolate and peanut butter and so on.

Bean Cake

1 15 oz. can black beans (drained & rinsed)
1 c. eggbeaters (or 4 eggs)
1 c. Splenda
3 T. baking cocoa
1 t. baking powder
2 T. oil
1 t. Vanilla

mix all in blender - pour into 8x8 glass pan sprayed with Pam.
Bake at 350 degrees for 35-40 minutes.

Come to think of it, I've got everything this recipe calls for and I was wondering what to do with the rest of the can of beans I opened.

My problem is that my oven is out. I wonder if this can be made in the microwave. Maybe if I break it down into muffin sized cakes.

I made it and it's awesome.

I broke the recipe in half and cooked it in a small glass dish in the microwave. After it cooled, I put some fat free Cool Whip on it as a topping, but it was good enough to eat without it.

I found a recipe for an icing to put on it, if you want.

South Beach Diet Friendly Icing

1/2 package softened reduced fat or fat free cream cheese
1/2 container of fat free Coolwhip
1/4 c. to 1/2 c. Splenda, depending on taste
1 T. Cocoa Powder
1 t. coconut extract or vanilla extract

Beat until creamy.

hmmm...is this ok for phase I? it looks like it is, but i just want to make sure. i could totally make this tonight for dessert!

also, does anyone know how many calories are in each serving and how many servings the recipe makes?

I've got it entered in my MasterCook program and here's what it says for 12 servings;

Nutrition per serving;

Calories: 186
Total fat: 3 grams
Sodium: 103 mg.
Carbs: 31 grams
Dietary fiber: 6 grams
Protein: 10 grams
