Default Peanut Butter Cookies * All Phases

Here's a good low carb recipe that should also work for all phases of the SB diet. I made these a couple of weeks ago when I was really wanting a peanut butter cookie. Just watch your portions with this one. :Whip: They're pretty good.

Peanut Butter Cookies

1 egg
1 cup of natural peanut butter (tons less sugar!)
1 cup of granulated Splenda
1 tsp vanilla

Mix together very well, and drop teaspoon sized balls on a greased cookie sheet. (The smaller you make them, the more you get!) Bake at 325 for about 10 minutes.
They're crumbly when they first come out of the oven, but keeping them in the fridge will help with that.

Just a hint - smash em a bit into cookie shape - they don't spread - if you make them in balls, they stay in balls - but YUM! Great snack...

Hey Luv- do you suppose a serving is 1 or the 4 I ended up snacking on today?? I forgot to eat my real snacks and was starving! Oops...

These sound very yummy. The only thing is with sweets once I start I can't stop. hehe

I'll try to make them when I have more self control over eating sweets.

Now you know why those snacks are so important.

I've had trouble with them myself and haven't made any for awhile. And the next time I make some I think I'll just make 1/2 a batch or give half away.
