Default Whole wheat is looking a whole lot less wheaty these days

Food processors are selling more of a newly popular flour that merges whole-wheat health benefits with the color, taste and texture of white bread.
The secret: white wheat, a grain that can be milled to resemble pancake-friendly all-purpose flour, but is as healthy as traditional whole wheat.
Though white wheat has been available for years, it's recently garnered serious attention thanks to new government dietary guidelines urging Americans to eat at least three servings a day of whole grains.
"The word is out that Americans should eat more whole grains for a healthier diet," says Garth Neuffer, spokesman for ConAgra Foods Inc., which launches a white wheat-based flour this summer. "However, people also have shown they won't sacrifice taste and convenience. The majority of Americans still want a white flour-tasting product."
That's why white whole-wheat flour has shown up in numerous healthier versions of many refined flour icons during the past year, including Wonder Bread and Pepperidge Farm Goldfish Crackers.

I've posted a message on the boards at the official SBD web site asking what they think about this new white whole wheat flour. I'll do a follow up post once I get an answer from their Nutritionists.

Still, I'm thinking that there's not enough fiber in it to make it acceptable for SB standards. But, we'll see what comes from the site and I'll post it here.

I did find an article about a study done with rats on the white wheat flour and whole wheat flour. Here's the headline and the link for the rest of the article.

Wholewheat flour ensures higher mineral absorption and bioavailability than white wheat flour in rats

I would be really interested in finding more info on this from you luv. If it were legal, it would be great for hamburger and hot dog buns, but nothing beats whole wheat toast! I LOVE it! Way better than white toast. Also, I made whole wheat dinner rolls and they were really good too. Although the dough was really heavy and didn't rise quite as high as white.
Please keep us posted!

All wheat flour is brown and white flour is bleached wheat flour, so who's to say this isn't just bleached whole wheat flour. Sounds like Frankenfoods to me! And if whole wheat flour is going to taste like white flour than something has changed, not sure for the better....

I'd rather have my foods less processed than more!!

While many consumers recognize the benefits of whole grains, the taste and texture of whole grains keep them from embracing these types of foods. According to a recent Gallup poll, a majority of mothers surveyed said their kids preferred white bread to whole-wheat or wheat bread.

"Ultragrain provides the food industry and its customers with the first whole-grain flour that combines preferred taste and texture with nutrition," said Greg Heckman, president and chief operating officer, ConAgra Food Ingredients. "It's not enough to provide just a nutritious product, you have to provide a product that consumers love to eat. Ultragrain delivers the best of both worlds." http://www.conagrafoods.com/media/me...sp?ID=20041009
Okay, I have a question about the sentence I've put in red. Since when do children dictate to parents what they will and won't eat? Knowing what we do now about nutrition, I would start my kids off eating ww bread. That's what would be in front of them and if they didn't eat it ...... they wouldn't have a sandwich then! I don't care what they prefer!

My son and I had many a time when I put something in front of him at the dinner table and he didn't get down until that food was at least tasted.

I'm sorry, but parents rolling over and giving in to their children is a pet peeve of mine. :Bang:

You're right about it not being natural food, Mindy. I think when I was reading about it yesterday that they said they said they had made it from an albino wheat grain. Conagra says that it's a super secret milling process. BTW, who'd trust a place with the word "con" in their company name anyway? :Bang:

Good one Luv! Conning agriculture is probably the full meaning!! I'm sure kiddies like white bread because it is so soft and full of air. But just like you said, if they weren't used to it in the first place they wouldn't know the difference!!!

I finally got an answer to me inquiry.

Quote:
Thank you for that article, very informative. White wheat flour has been on the market for some time and the new emphasis on more whole grains has given manufacturers new reasons to use it in foods. White wheat flour can be milled in such a way as to retain the entire wheat grain, including the bran and germ. In this sense, it is a whole grain. Our guidelines for choosing bread still remain:
"Unless otherwise stated, choose whole grain products that have 3 grams of fiber or more per ounce(~28 grams)."
Surprise, surprise. Okay, so it looks like white wheat is in! Just try finding one that has the SBD guidelines of 3 grams of fiber per slice and no trans fats.

I know that Sara Lee makes a white wheat bread, but I don't know if it meets the guidelines. My bf bought some a few weeks ago and I wouldn't try it because I was leery about it being legal on this plan.

I'll believe it when someone can tell me the wheat isn't bleached!!

I looked at the Sara Lee website, it doesn't give you the nutritional label for the whole grain white bread...

I believe that I read somewhere that it's made from albino wheat grain. Something makes me think it's genetically engineered.

That always bugs me when a company doesn't include nutritional labels for items on their web site. It makes me wonder, what are they trying to hide?
