| Food processors are selling more of a newly popular flour that merges whole-wheat health benefits with the color, taste and texture of white bread. The secret: white wheat, a grain that can be milled to resemble pancake-friendly all-purpose flour, but is as healthy as traditional whole wheat. Though white wheat has been available for years, it's recently garnered serious attention thanks to new government dietary guidelines urging Americans to eat at least three servings a day of whole grains. "The word is out that Americans should eat more whole grains for a healthier diet," says Garth Neuffer, spokesman for ConAgra Foods Inc., which launches a white wheat-based flour this summer. "However, people also have shown they won't sacrifice taste and convenience. The majority of Americans still want a white flour-tasting product." | I've posted a message on the boards at the official SBD web site asking what they think about this new white whole wheat flour. I'll do a follow up post once I get an answer from their Nutritionists. Still, I'm thinking that there's not enough fiber in it to make it acceptable for SB standards. But, we'll see what comes from the site and I'll post it here. I did find an article about a study done with rats on the white wheat flour and whole wheat flour. | I would be really interested in finding more info on this from you luv. If it were legal, it would be great for hamburger and hot dog buns, but nothing beats whole wheat toast! I LOVE it! Way better than white toast. Also, I made whole wheat dinner rolls and they were really good too. Although the dough was really heavy and didn't rise quite as high as white. | All wheat flour is brown and white flour is bleached wheat flour, so who's to say this isn't just bleached whole wheat flour. Sounds like Frankenfoods to me! And if whole wheat flour is going to taste like white flour than something has changed, not sure for the better.... I'd rather have my foods less processed than more!! | ||||||||||

I think when I was reading about it yesterday that they said they said they had made it from an albino wheat grain. Conagra says that it's a super secret milling process. | I'll believe it when someone can tell me the wheat isn't bleached!! I looked at the Sara Lee website, it doesn't give you the nutritional label for the whole grain white bread... | ||||||||||
