| In this recipe you can use any veggies that you have on hand. Get them ready before you start cooking;Some suggestions are 2 med carrots, Half pound of fresh green beans, a red or green bell pepper, half a cauliflower separated into flowerettes, half pound of broccoli, also separated, half pound of butternut or banana squash, cut into 1 inch pieces. 2 T oil 1 large onion, coarsely chopped 1 teap of salt 1 teap of curry 1/2 teap of pepper 1/4 teap of ginger and cumin 1/8 teasp cayenne 2 bay leaves In a large pan, over med heat, add oil and onions and cook until tender, add spices and stir cooking for about 1 minute until the flavors of the spices reach your nose. Add you veggies and about 3/4 of a cup of water, . Cover bring to a boil, reduce heat and simmer unitl just tender (20 minutes) Remove the bay leave and serve. (if you use any soft veggies like zucchini, add them later as they cook faster) This is a great side to serve with other India dishes like Spiced Eggplant, a Lentil dish
