Default Coconut Flan

OK I don't have the SB book in front of me but has anyone tried the Coconut Flan recipe? It is to DIE for!! I just love it and it is so perfectly legal!!!! I'm sorry I can't give you the recipe exactly right now (it is in the book), but I will give you the jist of it and try to write it down so I can post it properly later:

It is made with part-skim ricotta, eggs and skim milk, coconut extract and vanilla extract, splenda and topped with sugar-free maple syrup (I like the no carb gourmet brand because it is thick and gooey - not watery like most). You bake the flan in ramikins which sit in a water bath, then top with the syrup before serving.

I really love this dessert and it does not taste like a diet food at all!!!

I will post it properly for those without the book as soon as I have a moment to write it down. I'm a busy girl!!!!!!

Mindy! I bought some more ricotta cheese just so I could try this out. But, I couldn't find it. Is it in the SB book or the new cook book?

The recipe was in the blue book. Here it is finally:

Coconut Flavored Flan

Serves 4

1 cup part-skim ricotta cheese
1 cup skim milk
4 eggs or 1 cup egg substitute
1 tsp. each vanilla, coconut extract
1/3 cup Splenda or to taste
2 Tbs. sugar-free maple syrup

Pre-heat oven to 350 F.
In a blender mix together all ingredients, except the maple syrup.
Spray 4 custard dishes with cooking spray.
Divide the maple syrup among the custard dishes.
Divide the flan mixture also among the custard dishes.
Place about 3 " of warm water in an 8x8 baking dish.
Place the custard dishes in the water bath.
Place baking dish with custard dishes in oven.
Bake for 40 minutes or until a knife comes clean when introduced to a custard.
Remove from oven and let cool on a rack.
Serve warm or cold with a spoonful of the sf maple syrup on top of the flan.

Some like it with rum extract in the mix too . I don't make it this way.

I need to go buy some ramikins first.

You know I like all this cooking and eating good foods that I'm doing with this plan, but I need more kitchen stuff. And I hate all the dirty dishes.

But, I'll let you know when I do try it. It sounds really good!
