For any of you out there who like me love potatoe skins ( the skins of baked potatoes topped with chesse, bacon, and chives) then here is an alternative to help with those yummy cravings. I substitute the potatoe with a zucchinie or a yellow squash cut in legthwise and then cut again in halves to make my little "tato skins" i scoop out most of the pulp of the squash then i bake them until tender crisp remove from oven and spoon back in some of the pulp top with reduce fat shredded chesse, crumble turkey bacon, and chives place back into oven until chesses is melted yummy

also i used to luv these snacks dipped in ranch dressing so now i just substitue regular ranch for Krafts south beach diet ranch dressing it tastes great though i will admit at first it can leave a bit of an after taste
