Thumbs up Shrimp Scampi * Phase one

Serve with a salad or in later phases over whole wheat-pasta or brown rice.

Prep time: 10 min. Cook time: 8 min.

1 ½ pounds fresh or thawed frozen shrimp, peeled and deveined
3 T. trans-fat free margarine
4 garlic cloves, minced
¼ c. fresh lemon juice
3 T. chopped fresh parsley
1/8 t. red pepper flakes
Salt and freshly ground black pepper

Rinse shrimp under cold water and pat dry well with a paper towel. Season with salt and pepper.

Heat margarine and garlic in a large skillet over medium heat until melted and bubbling, 1 to 2 minutes. Add shrimp and stir to coat with margarine.

Add lemon juice, parsley, and red pepper flakes; cook, stirring occasionally, until shrimp are pink, about 2 minutes; do not overcook or the shrimp will be tough. Remove from heat, season with salt and pepper, and serve hot.

This could also be served over white kidney beans that had be soaked in garlic and salt water over night and then boiled in salt water with onion and bay leaves for about 1 1/2 hours. This can be done in a large batch and then you can keep them covered in the fridge to use in dishes during the week. It takes more effort, but they taste so much better that the canned. The cannned will do if you are in a pinch though.

I made this last night and it was so delicious! My whole family raved about it! I am not a big seafood eater but I like shrimp and lobster. Plus, I have never made shrimp scampi before, so I was intrigued.

I recommend this to anyone who loves to feel like they are being "naughty" but are staying right on track! Thanks for posting the recipe!

a great side to this that keeps it at Phase One is spaghetti squash! It's just like spaghetti, but easier to cook. just add some butter spread of your choice, salt, pepper and parmesan.
