| Here's a super simple one I threw together when I was trying to be creative in Phase 1. I'm well into Phase 2 and still love it. I don't change a thing. I always make enough for 2 meals. 2 pcs. boneless, skinless chicken breasts green pepper cut into strips sliced onions zucchini cut in quarters jar of your favorite salsa (or your homemade) red. fat Mexican cheese blend (or your rf cheese of choice) lite sour cream or plain yogurt (optional) Place breasts in small baking dish put on green pepper strips and onion rings and zucchini pour the salsa over the top Bake at 350 deg. for about 40 minutes, checking to spoon juices over now and then. About 5 minutes before you're ready to take it out of the oven, sprinkle on the cheese, bake for another 5 mins. or so. That's it! Short, tangy and simple. No seasonings needed because there's so much flavor in the salsa. Put a little lite sour cream on the side if you like and serve with a nice salad. Plenty of veggies and lots of flavor. If you have more to serve, make enough for all to enjoy. Enjoy! | |||||||||||
