| I just threw together this fabulous chicken dish. I had defrosted a piece of chicken, but had no idea what I was going to do with it. I didn't want a big dinner salad. Here's what I created. Roasted Chicken pcs. with sweet potato & brussel sprouts (don't turn the page because you see brussel sprouts. The herbs and spices make this dish. I'm hate them... but not when they're roasted and well seasoned. This is for one serving... but no reason not to share this one with the family. Boneless, skinless chicken breast 1 sm. sw. potato 10-20 fresh brussel sprouts (stems cut, cut in quarters) Add some olive oil to a sm. bowl (all ingredients will need to be coated) throw in chicken & vegetables, including loose pcs. from the sprouts. Toss to coat well with the oil. I used two seasoning mixes. One was the 21 Seasoning Salute from Trader Joe's, and a grinder of a garlic mixture. The point is... add some seasonings that have some zip (garlic powder, ground pepper, and other herbs) I added basil & oregano. I tossed all that well. Add a little more olive oil if necessary. Bake at 350 deg. F. for about 1/2 hour. The sprouts should start to blacken (that's not burned), and the potatoes and chicken brown nicely. The potatoes are slightly crispy and soft inside. Sprinkle on a little good parm. cheese when serving. Serve with a nice salad, and you have a good amount of veggies, and a very flavorful, but very simple, meal. | |||||||||||
