Default Crockpot Mexican Chicken

Crockpot Mexican Chicken *quick and easy*

4 Boneless skinless chicken breasts (can be frozen...just cook longer)
1/2 c. Fat free sour cream
1/2 c. Salsa of your choice
1 pkg. Taco seasoning

Serves 4

Dump everything in the crockpot and cook on low 8-10 hours! Plain ff yogurt can be subsituted for the sour cream. If you're on phase 1, then remember that your daily limits of salsa and sour cream are 2 tablespoons of each.

I tried this recipe today and it was fantastic. The house smelled great, too. I wish we had smell-a-vision here.



I also found a recipe for Spanish Rice in an old Betty Crocker cook book I had and I tweaked it to fit into the SB plan. It's made with brown rice and doesn't take too much time or trouble. I like that in a recipe.

Anyway, I'll type out the recipe for the rice later and post it in this thread. I also have a recipe for refried beans using black soy beans. I haven't tried it yet, but I'll post it in this thread, also.

Okay, here's the refried beans recipe!

Low Carb Refried Beans

This version of the Mexican classic is made with black soy beans

INGREDIENTS:
1-2 strips of turkey bacon, cut into small pieces
1 can black soy beans
1/2 teaspoon garlic powder
salt or seasoning salt and pepper to taste
2 T skim milk

PREPARATION:

1. Fry bacon pieces until crispy.

2. Carefully add beans (it may splatter).

3. Stir, and mash beans. I use a potato masher, or sometimes a stick blender. You could put them in blender.

4. Add seasonings and adjust to taste. Heat until bubbling.

5. Add skim milk, and serve.

Each of 4 servings has 4.5 grams effective carbohydrate plus almost 6 grams of fiber.

Spanish Rice (brown rice) Phase two

2 slices turkey bacon, cooked and drained
1/2 medium onion, finely chopped
1/2 small green pepper, finely chopped
1 14.5 oz. can diced tomatoes
1/4-cup water
1/4 tablespoon Brown Sugar Twin
1/4 tablespoon Worcestershire sauce

1/8-teaspoon salt
1/2-teaspoon chili powder
1/16-teaspoon pepper
1 dash hot pepper sauce
2 cups brown rice

I always have my rice cooked up ahead of time and in the refrigerator. But if you want to add it uncooked, just add more water and cook longer.
In a 10-inch skillet, cook turkey bacon till crisp. Drain on paper toweling, crumble and set aside. In the bacon skillet, cook the onions and green pepper till tender. Stir in the tomatoes, water, brown sugar, Worcestershire sauce, salt, chili powder, pepper, and hot pepper sauce. Let the mixture cook for five minutes on medium heat. Stir in the brown rice. Let this cook on a medium heat until warm. Top with the crumbled turkey bacon.
