Default Ultimate Salmon Fillets * All phases

I found this recipe at this web site http://www.recipezaar.com/sitenews/ and I just made a few changes to it by cutting down on the fat. They have a newsletter that I get in my email.

Living on the west coast, we have eaten a great deal of salmon. This is ABSOLUTELY the best way we have found to cook it. It is so moist and the flavor is fantastic!

1 lb salmon fillets, fresh or frozen
1/3 cup lf sour cream or lf yogurt
2 teaspoons prepared mustard
2 teaspoons finely minced onions
2 teaspoons dried dill weed
3 tablespoons lf mayonnaise
2 tablespoons grated parmesan cheese
1/2 cup grated lf cheddar cheese
paprika

1. Preheat oven to 450 degrees.
2. If frozen, partially thaw fillets and cut into serving size pieces. Place in a greased baking dish.
3. Combine sour cream or yogurt, mustard, onion, dill, and mayonnaise.
4. Season with salt and pepper.
5. Spread mixture over fish.
6. Bake 20 minutes per inch of thickness of fish if frozen or 10-12 minutes if thawed.
7. When just done, sprinkle with the cheeses and a dash of paprika.
8. Broil 1 minute or until the cheese is bubbly and flecked with brown. Serve with lemon wedges.
The recipe makes three servings. The original calorie count was like 382, but 205 of that was from fat. To cut that number even further you could sub fat free items for the low fat ones. You'll still be getting your healthy Omega 3 fats from the salmon itself. And I'd just like to remind you that "Wild Alaskan Salmon" is the best for healthy omega 3 oils. Look for the word wild on the package.
