Unfortunately this is a very common and normal thing, so the good news is that you are not alone! A couple thoughts though on this:
1. You really should be including healthy carbs in P1 with daily portions of beans/legumes, allowed types of dairy and the minimum of 4.5 cups of veggies. So you aren't ever cutting out "carbohydrates" at all, you are just swapping out healthier ones for unhealthier ones.
2. P1 is not really the weight loss phase. Anyone with any significant amount of weight to lose, loses far more weight in P2 than they ever do in P1. It goes more slowly, but that's mostly because the "easy" water weight loss is all in P1. You can't really sustain that rate of loss in P1 either. That's the big assumption/fallacy that most people operate under, that if they stay in P1 the early sucess will continue and actually they are just as likely to plateau and stall out in P1 as they do when they start to transition to P2.

3. The foods we add back in during the P2 transition are still very healthy and necessary for our overall health and well being. Our bodies and brains NEED carbohydrates. no diet should ever eliminate or overly restrict any of the three main macronutrient categories. (fats, proteins and carbohydrates) In P2 we learn how to bring in the healthiest and most beneficial of the higher carbohydrate sources and pair them with other foods to help eliminate the food based hunger pangs also known as "cravings". Whole grains, starchy veggies and fruits are all very good for us to allow us to operate at optimal levels and improve and maintain our health. There is nothing to be afraid of about them. They are not "bad" or "evil" or the cause of what made us overweight to begin with in and of themselves. We just need to learn which ones work the best for us in appropriate quantities as part of an overall healthy and well balanced dietary program. We can't do that if we stay in P1, so really the only logical choice is to venture bravely into the way you will learn to eat for the rest of your life!

It's often a bit scary, usually involves some mistakes and further "learning moments", but ultimately it is the way the program was designed to work and is necessary for us to become truly healthy!
