Default Spagehtti Squash

I bought one.

Now what do I do with it?

I understand the microwaving it for a bit and then scooping out the seeds and taking out the strands. But then what?

Any recipes? Can I just put olive oil, seasonings and parmesan cheese on it and eat it that way? Any other ideas?

Must start by saying I am not a very skilled or experienced cook!

I've tried it about 3 times. The most difficulty I had was cooking it enough, evenly & throughout. I had the best luck with the conventional oven, but with the heat & the cost that may not be the best option. With my microwave, I had to cook it longer than recommended & it still wasn't cooked evenly. I found that if it's not cooked enough I couldn't get the strands. It was too hard.

I found it very bland, thought it definitely needed salt &/or other seasonings. Best for me was having it like spaghetti, with a red sauce. (Just made my sauce differently than the "Italian-Style Spaghetti Sauce" recipe in the blue book.)

At least once, it was really good, & there's plenty of extra for leftovers.

I think I've heard that it's good the way you're thinking of doing.

You were right. I didn't get it done evenly in my microwave. Some places were overly done and others were still hard. I did the best I could at getting the strands out. I will do it in the oven the next time ........ and wait until cooler weather to do it!

Except of course cooking it in the micro. I skipped the butter. I didn't have any marjoram or thyme. And I used a can of diced tomatoes.

I think it was pretty good!

This place has tons of squash recipes. http://www.cooks.com/rec/search?q=spagehtti+squash You just have to look at them and see if they have SBD friendly ingredients. Of course there's always tweaking.

When I was on Atkins, I used to eat spaghetti squash made like fettichini alfredo. I used a cream and butter sauce then. It was really outstanding. So on SB you'd cut the fat and keep the taste.

I would try using smart balance and light coconut milk or what ever creamer you use (I use the Silk Soy Creamer). Plus your other spices except for tomato (to keep it more like an alfredo)!

Oh now I have to go get one this weekend :jester: !

When I cook my spaghetti squash in the microwave it usually comes out perfect. What I do is slice the squash in 1/2 (the long way) and lay it cut side down in a microwaveable glass dish with about 1 inch of water, poke a few holes in the skin with a fork. Then, nuke it on high for about 7 minutes! I have never had any issues with some parts getting more done than others. My microwave does have a automatic turn table in it though, don't know if your's does or not. I've owned both styles.

Thats how i cook mine too Mog,turns out great.
I love it in place of noodles for spagetti, its soooo yummy

I prefer cooking mine in my regular oven, I just don't care for microwaved food, but if I were going to microwave, cutting it in half and using a bit of water would definitely help. That's how I do it in the oven. I use my microwave only for re-heating coffee and making popcorn.

I love squash, when I fix it I put leftovers in individual freezer bags and freeze for later. This works great since my dh doesn't care for it.
