This is scaring me because when I looked at the first recipe for quick bread, it included 1/3 granulated sugar and also included regular flour in addition to whole wheat flour and called for more regular than whole wheat!

That doesn't jive with the philosophy of South Beach! I noticed the recipe didn't give the sugar content. Perhaps it is 3 grams or under per serving (which SB allows), but I'm still scared off by it!

The whole recipe calls for 1/3 cup of granulated sugar. There are 16 teaspoons of sugar in 1/3 cup. One teaspoon equals 4 grams. There are 16 servings in this bread recipe. So that would equal 4 grams per serving.
Calories: 383
Total Fat: 16 g
Saturated Fat: 4 g
Cholesterol: 91 mg
Sodium: 730 mg
Carbohydrates: 15 g
Fiber: 1 g
Protein: 41 g

I would say that this is a phase 3 recipe. With some tweaking it could be a phase two. Leave out the real sugar and white flour, and use 2/3 c. of artificial sweetener and 2 1/2 cups of wheat flour.

Yeah, I notice that they didn't divide them into phases either. I looked at the rest of them and they look all right as far as ingredients go. But I'll need to list them according to phases, since they didn't do that.

I think those are healthier modifications don't you? I'm just surprised that they would feature a recipe containing more than their recommended 3 grams of sugar!

I agree with you, Mindy. After further research, I don't know where they got some of those recipes because they're not in either one of the recipe books or on the web site. :speechless:

But, I went through them and came up with this for which phases they should be for. The ones in green are suitable for ALL phases. The ones in blue are suitable for phases 2 and 3. And the one in red is suitable for phase 3. And now I hope that I haven't totally confused everyone.
