Unhappy south beach when diabetic?

i am putting all my family on the southbeach living but my 15 yr old is diabetic and has to have 75carbs per meal. how can i cook healthy but still make stuff that has enough carbs for him to ea too. I have already cleaned out our cupboards from all junk any advise would be graetly apperciated.

Well teenagers and children should be in P2 anyway, so they shouldn't be restricted to a P1 diet to begin with. What carb sources is he allowed and have you discussed with his pediatrician what he should be eating and what he should be avoiding other than the 75 gms of carbs guideline? I would think if you stick to the P2 starches and fruits list of things you can add in starting in P2, you should be able to get to those numbers with P1 and P2 carb sources combined. Dairy, beans, veggies, starches, whole grains and so forth from the allowed lists would hopefully get him to those levels. But I would think this is the kind of thing best discussed with a doctor since it is a medical condition. What did he/she recommend in terms of specific foods to get to that 75 gms target?

yeah i know about kids not being able to be on p1 . I just wanted to know what kind of food to keep in the house that are healthier. fruits and vegatables is what i was thinking. he is diabetic but i do not want to feed him junk. he is very thin, and i am acually want to fatten him up, LOL but want him to learn to eat healthy. we are all trying to eat better so he will not feel that he is being left out of the sugar. so we are all not eating sugar. we are making it a family affair. except my husband and i are going the extra step and going south beach. but thanks for advise. I will do that.
