Default What's for Dinner?

Not sure if we've had one of these on this board yet?

I've got 2 pork tenderloins defrosted so I think I'll be having those, most likely with salad and cauliflower.

Not sure yet how i'll cook them. just doing a recipe search now. anyone has an good recipes let me know!

That sounds good Sadie, I have some of those in the freezer. I think I will take them out for dinner too:Love3: Hubby likes applesauce with his. I think I will just have a nice green salad and broc-caul.

I just remembered I have a bottle of light spicy peanut satay sauce in the fridge so i threw my pork loins in the slow cooker and covered them with some of the peanut sauce. not sure how it will turn out..we'll see. Only 50 cals and 3g of fat for 2 tbsns. I was planning to use it for chicken but i'll see how it goes with pork.

I'll probably have mine over some riced cauliflower and hubby can have his with noodles or rice.

I was not sure what I was going to make tonight and then I saw your posts and I too have a pork tenderloin roast defrosting in my fridge. LOL!!!

I think I'll make mine with soy, sesame, ginger and scallions. I have oyster mushrooms and shitaki's that I bought over the weekend and I'd better use them tonight so I guess I'll make a veggie stir fry to go with it. And maybe over some brown rice (I had no grains at lunch so I can have em here).

Thanks for the suggestions! I have room for desert tonight so I think I'll make some coconut flan to go with.

Jen, I bet the slow-cook peanut satay will be yum.

LOL maybe this should have been titled 'how are you cooking your pork tenderloin for dinner' thread..

The peanut satay was really good, it's a thick sauce so of course the liquid the slow cooker creates really watered it down. but that's ok, what i ended up doing was throwing in a cup of cauliflower and letting it cook in the liquid. then i took a piece of the pork out for me, and my cauliflower and left my hubbies in tehre. i threw in a package of uncle bens bistro express rice (precooked stuff) and left it in about 15 mins till it soaked up alot of the sauce. I cubed/shredded the pork and poured a little more sauce on it (form the bottle so it coated it.) it came out amazing! next time i won't pour so much from the bottle in the cooker though..it was kind of a waste..

Tonight i made Pork Fried rice from yesterdays left over pork roast.

i just stirfried the following in a tbsp of olive oil.
green and red peppers,green onion,mushrooms,Pork,and brown rice.I whipped up and egg then poured into it all.Topped with some Lite soy sauce YUMM


After i ate it I realized that i should have checked to make sure soy sauce was alright????:Hiding:

I'm betting your soy sauce was just fine. They usually don't have sugar or much sugar in them. They're not sweet like Teryaki or Ponzu sauces. Looked great!!!!!! Woo Hoo now you're eating brown rice!!! Isn't this great?!!!!!!
