Default Easter Dinner

What are you planning on making for Easter dinnner, if you are having one? Traditionally we always have ham, not sure if that is acceptable or not for South Beach.

I know my poor children are going to be severly lacking in the candy department this year. Oh well, how much candy do kids really need anyhow lol.

I'll do a turkey, for the family i'll do stuffing and potatoes I just don't eat them. I'll probably have sweet potatoes and/or turnip, cauliflower and broccoli. I'll make a legal desert, maybe a cheesecake or something. haven't decided yet. Last time i made a turkey dinner i was on atkins (thanksgiving). I haven't looked up any legal sb deserts yet though i'm sure i can do one with light cheese and ricotta.

My stepdaughter still gets lots of chocoate and candy, i just stay away or make sure i make something legal for me if i get a craving.


I'm sure ham is fine, you can get them fairly low fat? I would just watch the sugars or anything that you add to them.

Hello...I don't cook on Easter but my mom and my mil both have ham...and sometimes turkey too...lots of rice...potatoes...pasta shells...stuffing and rolls as sides...so...hopefully someone will make some veggies or I can bring a nice side dish...

A good dessert if you are on phase II is finding a sugarfree angel food cake and making your own layer cake using sugarfree cool whip mixed with strawberries or pineapple.......I will probably bring this over too...

You know, I looked up sugar free angel food cake and the web site says that even if it's sugar free, it's not a good choice for a dessert on phase 2. The reason they gave is because of the type of flour used.

And where it ranks on the glycemic index, I assume.

They're not saying that you can never have anything like sugar free angel food cake. Just that it's not a good choice. I would save items for that as a special occasion .......... which could be a family Easter dinner, IMO.

I'm doing lamb chops over sauteed spinach with roasted asparagus.

I'm making the Lemon Olive oil cake for dessert (from the SB Quick & Easy Cookbook) and I'm going to top it with ff redi-whip and some strawberries, and add some bittersweet chocolate shavings to it.
