I think that you'll have to skip using a whole chicken because it will make your stock too fatty for SB. We're suppose to eat only white meat chicken. I've made chicken soup before and I used a can of white meat chicken and a can of 98% fat free chicken broth. Skip the carrots and the rice since you're starting over with phase one now. Am I right about that? If you're in phase two I'd go lithly on the carrots and use brown rice. Also, read the label on the tomato sauce can for any added sugars. Not the natural occuring sugars from tomatoes, but added sugars.

I just had some pinto bean soup myself and it was really good.

Oh, I just fixed some pinto beans according to directions on the bag. I added some bite size lean ham, celery, carrots, oinion and Mrs. Dash seasoning along with seasoned salt and pepper. Skip the carrots if you're in phase one.

A very good canned bean soup is made by Healthy Choice. It's a ham and white bean soup with a lower fat content. I use it sometimes if I'm in a pinch and can't cook my own.
