Default Food Dilemma!

My office is having a pot luck luncheon next week to pay tribute to a co-worker that's leaving. I need to bring a dish. I figure I would make something SB friendly so at least I could eat it :Clap:, but I'm having a hard time coming up with something that can feed a bunch of people (around 30) without making me go broke.

Ideally it needs to be a hot entree type dish. And something easy to make. First I was going to do something I call "Chicken Marinara", which is simply chicken tenders covered in marinara sauce and you bake it in the oven.

Well I use Rao's marinara sauce at home. One because it is totally SB friendly and second because it is absolutely delicious. But that stuff costs a fortune! I don't buy it too often because of the price, so as much as I "love" my co-workers I can't see me feeding 30 people this stuff.

Any ideas on a low-cost, fast and easy SB friendly entree I could make to feed a lot of people???? Pot luck lunches used to be such a great thing in an office but with the price of food these days it's breaking the bank!!!!!

What about a pot o chili with lots of condoments on the side, made with turkey, or lasangna or something with pasta. I once found a great mexican lasangna recipe on the back of the noodle box.

Hey Lynne good suggestion! But unfortuntely I read this today - Monday morning and I did my grocery shopping yesterday:Sarcastic:

But I settled for making a SB legal chicken caeser salad. I figure I could make a couple of packages of chicken breasts stretch a long way but cutting up the chicken into small cubes and then there's the lettuce, homemade dressing and homemade croutons.

I wanted to make something I could be sure to eat because I know this potluck will be boobie trapped with all kinds of bad for you ingredients!

I already had one package of chicken breasts so I bought one more, romaine lettuce, a lemon, and a loaf of ww bread to make the croutons with and some pre-shredded parmesean cheese. I have the mayo and worstechire and garlic and olive oil that I'll need for the dressing.

But when we have another (my office is always partying), I'm going to make the turkey chili. In fact, I may make some this weekend. You got me in the mood for chili!!!!!!:joy:

Oh and the mayo is low fat and no one will be the wiser. The dressing still tastes full flavor thanks to the garlic, olive oil, worstechire and lemon!!!!!!!!
