Default Calling ALL Foodies

Hey there's got to be some foodies out there? Who loves to cook? Who loves their chef knife and fresh ingredients?

What have you guys been cooking out there. C'mon the sky is practically the limit on this diet so there's plenty of inspiration!

What spring time veggies have you turned on? There's been really great fresh spinach here in south Florida and when I was on vacation I picked up some smoked spanish paprika that I just can't get on the east coast. Think I'll make a fish dish with it or sprinkle it on some turkey burgers.

And I got to taste fresh FAVA beans on the west coast. Gosh those are great. The best use of them was the fava bean bruschetta I had at a restaurant. You could actually taste springtime in those puppies!!!!

I know YOU are out there. What is your thing???

On the weekend i made my favorite veggie dish on the bbq, and i'ts so easy:

chop up lots of zucchini, red pepper, green pepper, onion in 1" chunks, toss with olive oil. Cook in a bbq veggie basket or grill pan until soft/cooked. salt pepper to taste. It sounds so simple but it's really amazing. I've also sprinkled it with canned parmesan during the last 5 mins or so of cooking and that is excellent too.

You know Jen, I really think some of the BEST tasting foods are prepared simply! That way the food shines! You keep talking about your grilled veggies and I have not made them, so YES this goes on my shopping list and menu for this week!

When I was in California, DH and I went to a wonderful country French restaurant and had the best meal. One of the dishes was SO simple and tasty, I have now made it at home and it's fabulous. Here it is:

Grilled asparagus with a poached egg on top and shaved parmasean cheese over it.

Just brush the asparagus with olive oil and sprinkle with salt & pepper. Either grill on bbq or roast in oven at 450 until slightly browned and crispy. Poach an egg and don't let it set too firmly. When asparagus is done, plate up and spoon the poached egg over it so it runs over the asparagus -sort of like a hollandaise sauce. Then with a vegetable peeler, shave off a few big shavings of hard parm. cheese. That's it!!

The creaminess of the poached egg over the fresh grilled veggies and the kick from the parm cheese is heavenly!!

I think you're right mindy, i find the more things i sometimes add to things, i can ruin them. when things are simple and only have a few ingredients they seem to come out better.

I took this pic last year it was still in photobucket. I only had zucchini onion and green peppers but that's more than enough.

God that makes my mouth water and I'm writing this at 8:30 am!!! I love how veggies carmalize on the grill. I make grilled asparagus all the time so I definitely need to make this. It's so amazing how seductive a photo can be!!

Any other foodies want to come play with us?? Show us pictures of your best SB foods!!!!:joy:
