| When my husband has done the diet with me in the past, breakfast was always such a challenge since he's up and out at 5am. Phase 1 of course being the most difficult time to find something quick and filling. ????: South Beach Diet Forums http://www.southbeachdietbulletinboard.com/quick-meals-menu-ideas/1300-plese-suggest-some-quick-breakfast-recipes.html For Phase 1 I usually cook up some hard boiled eggs - slicing some and leaving others whole, some turkey or Canadian bacon and slice some tomatoes the night before. Then in the morning he can easily have the sliced tomato layered with the egg and bacon on top for a nice little on the go breakfast, I know he also adds a slice of fat-free cheese to his, the great part is it can be eaten cold or warmed in the microwave for a few seconds. Then on other mornings he'll just grab one of the whole hard boiled eggs and a few slices of bacon for a quick breakfast. I hope this helps. There is also a good sausage and cheese cup recipe in one of the books I have used which are great because they are cooked in cupcake liners so they don't require a fork or knife to eat them, when I make those I usually make about two dozen over the weekend so they are there during the week to grab and go. Here is that recipe if you are interested: Makes 6 cups: 4 ounces turkey sausage or crumbled turkey bacon 1/2 green bell pepper, chopped 1/4 onion, chopped 5 large eggs 1 can (12 ounces) sliced mushrooms, drained 1/2 cup (2 ounces) shredded reduced-fat Cheddar cheese Preheat oven to 350F. line 6-cup muffin pan with paper baking cups. In a medium nonstick skillet over medium-high heat, cook the sausage, pepper, and onion for 5 minutes, or until the sausage is no longer pink. Spoon the mixture into a bowl and cool slightly. Stir in the eggs and mushrooms. Evenly divide the mixture among the prepared muffin cups. Sprinkle with the cheese. Bake for 20 minutes, or until the egg is set. Now they can be stored in the fridge and warmed in the microwave for a quick breakfast or snack. | ||||||||||
