Default Black Bean and Salsa Soup * All Phases & Vegetarian

I just changed the sour cream to low fat.

1 (15 ounce) can black beans, drained and rinsed
3/4 cup beef broth
1/2 cup thick & chunky salsa
1/2 teaspoon cumin
2 tablespoons low fat sour cream
1 tablespoon sliced green onions

2 servings

20 minutes 5 mins prep

1.)In a food processor with a metal blade or a blender container, combine the beans, broth, salsa, and cumin. Process 1 minute, or until smooth.
2.)Heat bean mixture in a medium saucepan over medium heat, until thoroughly heated.
3.)To serve, ladle soup into 2 individual bowls. Spoon 1 tablespoon of sour cream on top of each; swirl gently. Sprinkle with green onions.

Unhappy hhmm black bean and salsa soup?

I keep finding that alot of the salsa's out there are really high in sugars can you recommend one that is low or sugar free? I'd really like to try this recipe but I want to stay as close to the Phase 1 diet as I can. I've lost between 7-9 pounds so far my weight fluctuates daily. Thanks if you have any suggestions.

Are the sugars added or are they natural sugars from the tomatos? I have no trouble finding SF salsa's, look for the mexican brands, if you read the ingredients they usually only have veggies--no sugar or anything added! The nutritional label may say sugar, but if its not in the ingredients that means its just the naturally occuring sugars.

I'm fortunate because we grow an abundance of tomatos, jalepenos and cilantro and I make and can my own so I have homemade salsa all year long!

Muir Glen has only one gram of sugar in their medium salsa, and they taste good! Here's a link to the website. They are manufactured by general mills and the line is organic too!

This sounds like a great recipe especially for when I go out camping. Thanks luv.
I use Pace's and it isn't bad at all.
