| 1 egg 2 T. low fat cream cheese 1 packet sweetener of choice flavor of choice (use anything from 1/4 t. cinnamon, 1/4 t. vanilla or other extract) Use your imagination! You can add 2 T. flax seed meal for added fiber if you need it or you want a less eggy taste. Soften the cream cheese in the microwave for 15-20 sec. Use a microwaveable bowl. Mix flavor and sweetener into the cream cheese if you want icing take out some of the mixture. Add the egg and flax (if using). Mix, leaving it a little lumpy. Place in the micro and nuke 30 seconds to 2 min. depending on your microwave and how dry you want it. Ice the finished item if desired and eat. Be careful not to burn your mouth as it is hot. It's more bread like if you use the flax seed meal. | |||||||||||

| I used to love these for a quick breakfast on Atkins. I didn't know cream cheese was ok on Phase 1 SB, I need to read the list again, for some reason I thought it said no soft cheeses on phase 1. Woohooo though, 1 more option for breakfast. | ||||||||||

| i'd never tried this "danish" idea until about 10 minutes ago....i used the flax seed....and it reminds me of eggy french toast....i think next time i need to use a little more splenda....but its pretty good | ||||||||||
