Default Shirataki Noodles Recipe

Shirataki Noodles are acceptable for every phase of SB.

Here's a little info about Shirataki Noodles, made from tofu and a Japanese yam (also known as Konjac):

They're about 96% water and 4% soluble fiber. So its a great low carb noodle! They are a very traditional Japanese product. The word shirataki means "white waterfall," because of the appearance of these noodles. They are translucent and have no discernable taste of their own. But they easily absorb flavors from the other ingredients they are cooked with. So go ahead and use them as you would any other noodle or pasta They can also be sauted in a pan with garlic and soy sauce.

The noodles come packaged in water in a plastic bag. I've also heard they come in cans, too. Please drain the noodles well before cooking. The noodles can stay at room temperature for about one year. Do not freeze. To cook, simply steam, saute or boil for 3-5 minutes. Then add them as an ingredient to any other dish. You can even use them cold with a simple dressing.

Shrimptastic Fettucine Alfredo

Serves 1

1 8 oz. package Tofu Shirataki Fettucine Shape noodles
1 oz. fat-free cream cheese
2 tsp. reduced-fat Parmesan Cheese
1 tsp. fat-free sour cream
1/2 cup cooked chopped broccoli
5 medium cooked shrimp
Salt and pepper, to taste (if desired)

1. Rinse and drain fettucine noodles very well and place in a microwave-safe bowl. Microwave for 1 minute, drain well again, and pat dry with paper towels.

2. Add cheeses, sour cream and broccoli. Mix thoroughly.

3. Microwave mixture about half a minute to melt cheese further, then mix again.

4. Top with cooked shrimp. Season with salt and pepper to taste, and serve hot. Enjoy!

Nutrition per serving: 135 calories; 11g protein; 11.5g carbohydrates; 4.5g fat; 5g fiber
This could also be a vegetarian recipe. Or a meatless side dish.

Default Pan Fried Noodles

Here's another recipe using Shirataki Noodles:

Pan Fried Noodles * Phase 2

INGREDIENTS:

1 x 8 oz. package Tofu Shirataki Noodles
2 Tbsp. olive oil
2 cloves garlic, crushed
2 Tbsp. green onions, slivered
½ cup celery, slivered
1 cup carrots, shredded
3 Tbsp. teriyaki glaze
salt and pepper to taste

MAKES TWO SERVINGS

PREP TIME: 15 minutes COOK TIME: 10 minutes

DIRECTIONS:

Prepare noodles according to package directions, below. Cut into 3-4 inch lengths.

Heat oil in a non-stick 10-inch skillet with 2-inch sides, over medium-high heat. Add garlic, green onions, celery and carrots, cook until soft, 2-3 minutes.

Stir noodles into vegetables, press into a flat layer with spatula. Cook 2 minutes over high heat.

Add the teriyaki glaze to the pan, mix well with noodles and vegetables.

Cook 2-3 minutes longer and serve.
Serve as a side dish with grilled meats, chicken or seafood or alone as a vegetarian dish.

Default Peanut Butter Shirataki Noodles

Here's another recipe that I would LOVE to try.

Peanut Butter Shirataki Noodles

1 bag of tofu noodles, or plain yam root noodles
1 tbs peanut butter (no sugar and reduced fat)
1 tbs soy sauce
1 tbs rice wine vinegar s/f
1 tbs splenda
1 tbs scallions, aka green onions
4 oz cooked, diced chicken breast
Optional: hot oil

Drain and rinse noodles in cold water, then drain on paper towels (not everyone does this) and put into hot dry pan to remove as much water as possible. TURN OFF HEAT UNDER PAN

Put noodles in a bowl and set aside

Add peanut butter, soy sauce, vinegar, splenda and scallions into pan (Keep off heat) and stir with whisk until totally blended. It might look odd until the peanut butter is completely combined with the other liquids. If it get too thick add 1 tbs of water.

Add noodles back into pan and put heat on for about 1 or 2 minutes. Eat and enjoy!

Does the Teryaki glaze have 3 grams of sugar or less per serving? I would really like some asian food with a little teryaki or Hoissan flavor but have shied away due to sugar contents. What brand do you use if it is low sugar?

Jehling makes a terriyaki sauce that's got 1 gram of sugar per Tablespoon.

I ordered some sauces from Netrition yesterday. They have a Hoissan. I put it in another post on the board. I'll see if I can find it.

This is wonderful! I just went online and ordered 4 types of sauces. I ordered the BBQ, the Hoisson, the Spicy Peanut and the Cocktail! If I like these, I'll try the Teryaki and others!

Thanks so much Luv2!!!!!! These are the types of products I've been looking for and missing in my pantry even since I went low carb! Carb Options was the only Splenda bbq sauce I had found on the shelves and that is gone!!

I liked the spicy peanut and the cocktail sauce but probably won't order the other two again. Found a low sugar hoison locally so that takes care of that one. The bbq sauce is a mustardy type. I like the sweeter kind like the Carb Options, so this one isn't my style, though I will use all of them up. The are all good in their own way, but only the two I mentioned at top are worth ordering again...

I didn't like the BBQ sauce. I'll probably go back to the Walden Farms brand, even though I'm not quite sure of what the heck's in there that makes all of their products zero calories! :speechless:
