Couscous-Stuffed Red Bell Peppers (P2) Couscous-Stuffed Red Bell Peppers (P2) 2 large red bell peppers—cut in half long way
1 pkg roasted Near East garlic & olive oil couscous --(5.8oz.)
1 cup chopped fresh spinach
1/3 cup grated Parmesan cheese
Cut peppers into halves, lengthwise; remove seeds and membranes and arrange in 8-inch square (2-quart) microwave-safe dish. Add 2 tablespoons water, cover with microwave-safe waxed paper and microwave on HIGH for 3-4 minutes or just until crisp-tender. Meanwhile, cook couscous as directed on package, omitting oil. Stir spinach and cheese into couscous. Spoon mixture into pepper halves. |
