An excellent Phase 1 recipe from The South Beach Diet.

1 medium zucchini
1 medium summer squash
1 medium red bell pepper
1 medium yellow bell pepper
1 lb fresh asparagus
1 red onion, chopped
3 tablespoons extra virgin olive oil
1 teaspoon salt
1/2 teaspoon black pepper

4 servings
45 minutes 15 mins prep

Preheat oven to 450 degrees.
Cut zucchini, summer squash, red pepper, yellow pepper and asparagus into bite-size pieces.
Put all vegetables in a large roasting pan, and toss with the oil, salt and black pepper.
Spread in a single layer.
Roast for 30 minutes, stirring occasionally, until vegetables are lightly browned and tender.

Roasted cauliflower is delicious! Just about any veggie benefits from the flavor of roasting. I don't particularly like broccoli, but since I've tried roasting it, I like it alot!! Roasted chick peas are devine!

Just about any veggie can be roasted - with or without olive oil and a dash of salt. I prefer mine tossed in a tiny bit of olive oil or sprayed with olive oil before roasting.

My favorite roasted veggie is Asparagus!

That mixture you posted sounds yummy Luv! I just may have to try that soon!

I've even been roasting frozen veggies and they are delicious! It's so fast and easy. What's also good is that you don't lose any vitamins as happens if your boil them.

Thanks for pulling this up, Merlia! I was looking for a recipe for roasting veggies the other day. Didn't have any luck (I was sort of in a hurry), so I just threw them in an oven-proof bowl in the oven. I think the secret is to have them in a single layer, because mine didn't turn out that great. They were okay, but I knew they could be better. I'll do this next time.

yeah, cookie sheets (the ones with the low sides, not the completely flat ones) seem to work best. We made a couple mixes of different veggies as our side dish contribution to T-Day dinner at our friends house. They are always delicious!
