| Surprise South Beach Mashed "Potatoes" Allowed in any phase Serves 4 4 cups cauliflower florets 1 ounce butter flavored cooking spray 1 fluid ounce fat-free half-and-half Pinch salt Pinch freshly ground black pepper Steam or microwave the cauliflower until soft. Puree in a food processor, adding the butter spray and the half-and-half to taste. Season with salt and pepper. Per serving: 81 cal. 2 g protein 5 g carbs 6 g fat 2 g sat. fats 82 mg sodium 4 mg cholesterol 3 g fiber | |||||||||||

| I make mine a little differently but it's still legal: Mashed cauliflower instead of potatoes has a surprisingly delicious flavor. After making these, I have decided that I like them even better than the real thing, as the cauliflower has a better depth of flavor than a potato. And before I started eating this way, I never at cauliflower! Here's how I make it SB friendly. This recipe is for two servings: Half head of fresh cauliflower (or 1-16 oz bag of florets from the produce dept) 1 Tablespoon Smart Balance (or Earth Balance) butter spread Light Coconut Milk - 2-3 Tablespoons (to taste) Salt & pepper - (to taste) Steam the florets on the stove in a pot with a steamer basket and lid. ????: South Beach Diet Forums http://www.southbeachdietbulletinboard.com/sides-salads-soups/34-surprise-south-beach-mashed-potatoes.html They are done when fork tender. Drain into colander. Put cooked florets into food processor and add the rest of the ingredients and process until you get the consistency of mashed potatoes. | these sounded fabulous when i saw them in the book. i wanted to give them a try today, but i don't have butter. tsk, tsk. luckily, i'm planning on running to the store to get some soy butter tonight (is that legal in phase I?), so i might be able to make them tomorrow. i'll let you all know how it goes. | |||||||||||

| I eat edamame all the time but I'm not familiar with the content of soy butter. I can't imagine it's not legal since it comes from soy, but check the label. Any sugar should be under 3 grams and sat fat should be under 6 grams. Let me know how the cauliflower turns out!:cloud: | ||||||||||
