Default Roasted Carrots and Mushrooms with Thyme * pahses 2 & 3

Roasted Carrots and Mushrooms with Thyme

(3-4 servings)
8-10 oz. baby carrots
8 oz sliced mushrooms (I buy the prewashed kind, but wash if needed)
2 T extra virgin olive oil

1/2 tsp. dried thyme or 1 T chopped fresh thyme leaves
salt/pepper to taste (I like Vege-sal for vegetables)
fresh chopped parsley for garnish (optional)

Preheat oven to 450 F. Cut carrots on diagonal into slices about 1/4 inch thick. Toss carrots with 1 T olive oil, thyme, salt, and pepper. Spread on large roasting pan (it should be big enough that the carrots are in a single layer). Roast carrots 15 minutes. Toss mushrooms with other T of olive oil. Stir into carrots and roast 15 minutes more. Serve hot, sprinkled with fresh parsley if you please.

Mmmm, I LOVE carrots and mushrooms ....... and asparagus ...... and broccoli .... and just about all veggies ...... except for okra. Ewww! I can't get past the slime part!

LOL, southern style is breaded and fried til its crispy, you wouldn't even know that it was once slimey! In fact you've given me an idea....parmesean cheese, hmmmm

Yea you know all of those veggies you mentinoned would be good mixed up and roasted! I'm starting to enjoy roasted veggies better than any other way! Only problem is here in the summer we try not to use the oven cause the heat is so bad...it'll have to remain a winter cooking style for us, unfortunatley!

That looks very tasty Luv2:sun: Another veggie lover here , i think i like just about everything.Ive not had Okra though i dont think? Im loving the roasted veggies the best also.Sure does bring out the flavor.

Oh, I know what you mean! Same here, unfortunately. My bf, Tom, won't like the house all heated up in the summer just for some roasted veggies. Now fresh raspberry pie, he could be talked into.

LOL, sounds just like John! Hey, do raspberries grow wild where you are? they don't here but they do where John comes from, I'm so jealous! they are my very favorite fruit!
