I get a diet newsletter from HungryGirl.com that has some pretty cool information in it. It's not specifically South Beach, but some of the things will work for the SBD lifestyle.
I thought this recipe looked awesome and could be tweaked to fit the SBD guidelines. I switched the bread to be whole wheat, even though I don't know if Wonder makes a whole wheat light bread. I assume that some company does. I hope.

OOH-LA-LA
Love the piping hot pairing of cooked onions, soup-drenched bread and melted, gooey cheese? Good news! You can make a guilt-free, diet-friendly version of classic french onion soup at home with HG's hot ROCKIN' recipe. Take a peek...and give it a whirl. Remember, onions are a girl's best friend (ok, maybe not, but they're delicious).
Ingredients:
1 can Progresso French Onion Soup
1/2 slice Wonder Whole Wheat Light Bread, toasted (or other 40 calorie per slice bread)
1 slice Sargento Deli-Sliced Reduced Fat Provelone Cheese
Directions:
Cook soup according to directions. Pour soup into an oven safe bowl. Place toasted bread on top of soup, then cover with cheese. Place bowl on cookie sheet and put into heated broiler, or simply place it in toaster oven until cheese gets bubbly. Makes 1 awesome-tastic serving.
