| This recipe rocks and is completely SB legal for all phases. I'm making it for Memorial Day to go with our burgers! I remember where I found it so the credit doesn't go to me! The only thing I changed was to use low fat mayo... 16 oz bag frozen cauliflower (I use 2 cups fresh instead, cut into florets) 4 hard boiled eggs, chopped 2 stalks celery, chopped 3 green onions (scallions) 3 tablespoons yellow mustard 1/2 cup low fat mayonnaise 1 tablespoons chopped dill pickle 1/8 teaspoon celery seed 1/4 teaspoon pepper 1/2 teaspoon salt Steam the cauliflower until soft, but not mushy; drain well. Cool, then cut in small - potato salad size chunks. Mix the mustard with the mayo, then mix all ingredients into the cauliflower. Chill at least 2 hours. Makes 6-8 servings: This goes great will bbq burgers,chicken or ribs!!! | ||||||||||
