| A Veggie Casserole - suitable for all phases 1 spaghetti squash, cooked and separated into strands 1 lg. onion, diced 1 green bell pepper, chopped 1 red bell pepper, chopped 2 TBSP olive oil 1 can (28oz) crushed tomatoes 3-5 cloves garlic, minced 1 tsp basil 1/2 tsp oregano 1/2 tsp crushed red pepper (optional) 1 cup grated mozzarella cheese 1/2 cup grated parmesan cheese Preheat oven to 375 F. Mix the cheese together and set aside. Heat olive oil in skillet and add the onion, peppers and garlic. Saute over medium heat for about 5 min. Add crushed tomatoes, basil and crushed red pepper. Simmer uncovered for about 15 min. Mix squash well with the cooked veggies and put half in the bottom of a 13x9 baking dish sprayed with cooking spray. Next layer half the cheese mix., followed by the other half of the veggie mix. Top with rest of chees mix. Bake for 30 min. or until cheese is bubbly and slightly browned. Let cool 10-15min. before serving. Note: You can add other veggies, too. If you have some leftover ones in your fridge, add them into the casserole. You can even throw in some cooked chicken or other lean meat and make it a main dish casserole. | |||||||||||

| mmh sounds good but I don't like squash that much have you tried it then? because if the initial taste is squashy I won't like it. Well I guess I don't have to add the squash I could try it without. | ||||||||||
