Default substitution questions??

I am starting Phase one tomorrow and I have a few questions....I get sick of salads pretty quickly, for lunch can I eat some lowfat refried beans with lowfat cheese instead? I know that would be low carb and high in protein? Also, I don't like the ricotta dessert option, can I substitute either a fudgsicle (the no sugar added ones) or jello with Coolwhip Free? I would really appreciate some advice because I know I will have a hard time sticking to the salad everyday.

You need a minimum of 4.5 cups of veggies per day. The recommended spacing is 1/2 cup with breakfast, 2 cups with lunch and 2 cups with dinner. It doesn't have to be salads though. Can be any of the allowed veggies.

Beans (fat free refried would be better than low fat if the fats are animal based) can be used as part of the veggies allowance, but 1/3 -1/2 cup is a recommended serving size, so should only replace a portion of that recommended 2 cups, not all of it. (BTW, you can have multiple bean servings in a day, just not supposed to have more than a 1/2 cup at one sitting.) I have always made a mix of black beans, tomato, gr. pepper and salsa heated in a microwave as an afternoon snack as I found it very satisfying to get me through my late afternoon "hunger zone". It's good with some LF shredded mexi cheese on it too!

The NSA fudge pops or the SF jello with the SF coolwhip are both allowed desserts. Just keep the 100 calorie sweet treat limit per day in mind. The ricotta cremes actually give you more nutrition than other sweet treats though and can help stabilize blood sugars overnight as well. But they are not everyone's favorite. I got used to them a bit in P1, but didn't really stick with them after that once I could use fruit for a dessert/night snack.

Be sure to check the sticky threads for the foods to enjoy list and the meal models here. You don't have to follow the menus in the book at all. The meal model template just makes more sense to me in terms of looking at how to put a daily meal plan together and I was able to make foods and meals I knew I would enjoy and eat!
