Default Attempting the ricotta!!

Well, I have only used ricotta cheese in my manicotti. So, I am a little hesitant to eat this as a dessert??? BUT, I am someone that will try something before I dismiss it. So.....I know Jilly puts splenda and vanilla in hers, any other options?? How much is a good snack, 1/2 cup, 1 cup?? Please help!! I am headed to the grocery VERY soon to shop for my upcoming 2nd week of phase 2!!

hmm I with you on that one. I just went to the store a few hours ago and bought some and have no idea what to do with it??? I mean I forgot vanilla extract so thats off the list till next shopping trip. If I find something ill let you know lol... but the sf coolwip.. yummmy on jello

well it's also the cheese in dessert cannoli's isn't it?

I think the book had several options. I think there was a coffee and/or mocha option with cocoa powder and/or espresso powder (basically instant espresso cyrstals). I remember sliced almonds in one we use to have. I have also heard that different ricottas work better than others and some like to blend the ricotta first to get it creamier.

I didn't like 'em much at first, but by the 2nd week of P1 they started tasting a lot better!

I stole these from my other board... shhhh.....

Mocha Ricotta Creme

1/2 cup part-skim ricotta cheese
1/2 tsp. unsweetened cocoa powder
1/4 tsp. vanilla extract (or coffee or chocolate, etc.)
1 pkg. sugar substitute
dash of espresso powder
5 mini chocolate chips

Mix all together in a dessert bowl. Serve chilled with a dusting of espresso powder and sprinkled with the mini chocolat chips.


Cappuccino Ricotta Crème
½ tsp. instant coffee granules
¾ tsp. Water
½ cup part-skim ricotta
1 pkg. Splenda
½ tsp. vanilla
Dash of cinnamon

Dissolve coffee granules in water in small mixing bowl. Add remaining ingredients and combine. Transfer to ramekin and chill.


Peanut Butter Cup Ricotta Crème
½ cup part-skim ricotta
1 pkg. Splenda
½ tsp. unsweetened cocoa powder
½ tsp. peanut butter

Combine all and chill.


Cinnamon Ricotta Crème (I'm pretty sure I found this on this website somewhere)
½ cup part-skim ricotta
1 pkg. Splenda
½ tsp. cinnamon
½ tsp. vanilla

Combine all and chill.


Chocolate Mint Ricotta Crème
½ cup part-skim ricotta
1 pkg. Splenda
½ tsp. unsweetened cocoa powder
1/8 tsp. peppermint extract

Combine all and chill.


Mounds Ricotta Crème
½ cup part-skim ricotta
1 pkg. Splenda
½ tsp. unsweetened cocoa powder
¼ tsp. coconut flavoring

Combine all and chill.


Baked Chocolate Ricotta Dessert
1 c. part-skim ricotta
1/2 c. low fat cottage cheese
1 egg
7 packets of Splenda
1/2 Tbsp. cocoa powder
1 Tbsp. sugar free chocolate syrup (e.g. DaVinci)

Combine ingredients in a food processor or blender and mix until smooth. Pour into a small (approx. 2 cup size) oven-safe dish and bake at 400 for 15-20 min. Chill before serving.

The first time I made this I used my hand blender instead of the food processor and it was a bit lumpy, but still tasted good.


Mock Pumpkin Spice Ricotta Creme Serves 2 (Phase 1)
Tastes like pumpkin pie but it is SB friendly

Description
Pumpkin is a food to avoid during Phase 1 of the diet, and it should be limited during Phase 2 and 3. However, you can capture that pumpkin pie flavor you love with the spice combination below—a variation on the South Beach Diet classic ricotta crème dessert.

Ingredients
1 cups part-skim ricotta cheese
1/2 teaspoons cinnamon
1/2 teaspoons vanilla extract
1/4 teaspoon ground nutmeg
1/2 teaspoons ground dried ginger
2 packages sugar substitute

Instructions
Mix together all the ingredients and chill. Scoop into dessert bowls or hollowed-out mini-pumpkins and serve.


Lemon Peel Ricotta Creme Recipe - South Beach Diet Phase 1
Fom The South Beach Diet (Ballantine Books)

Fast and easy to make, this is sort of a pudding made with ricotta cheese, grated lemon peel, vanilla, and sugar substitute. Good for a snack or dessert for those following the South Beach Diet.

INGREDIENTS:

* 1/2 c part-skim ricotta cheese
* 1/4 tsp grated lemon peel
* 1/4 tsp vanilla extract
* 1 pkg sugar substitute

PREPARATION:
Mix together the ricotta cheese, lemon peel, vanilla extract, and sugar substitute.
Serve chilled.

Yield: 1 serving

Oh BLESS YOU RedRox. I was trying to come up with ideas myself. If you don't want to blend the pumpkin pie one yourself, I believe the pumpkin pie spice mix will turn up the same flavor.

I'm sure any of these (except for the cooked ones) can be "boosted" into "smoothie" status by the addition of a little bit of milk and ice cubes in a blender.

Thanks a million Red! That was more than I had hoped for. I actually just used it to make a *waffle* and it turned out yummy! Can't wait to try some of these. I meant to say I was beginning 2nd week of Phase 1 not 2!!

Something else I just tried with ricotta..

the local Wal-Mart carries sugar-free Davinci coffee syrups

took a 1/3 c. of ricotta (because I wasn't THAT hungry) and added 1 1/2 tsp - 2 tsp of SF Kahlua

talk about YUM!
