Default Chicken Pistachio Salad review

If you haven't tried this recipe....DO IT! I made it for supper tonight, and it is SO good!!!!

Default Chicken Pistacchio salad

It has always been one of my favorites too!

South Beach Chicken-Pistachio Salad - 4 servings

1/2 c shelled pistachio nuts, finely ground
1/2 + 1/4 tsp. salt
1/2 tsp + 1 pinch freshly ground black pepper
4 boneless, skinless chicken breast halves
2 Tbsp extra-virgin olive oil
1/2 c diced sweet white onion
1 head romaine lettuce

Dressing:
1 tsp. grated sweet white onion
1 lg. ripe avocado, pitted and peeled

3 Tbsp extra-virgin olive oil
3 Tbs fresh lime juice
1 Tbs. water.

Preheat over to 375F. Mix nuts in pie plate with 1/2 tsp. sale and 1/2 tsp. pepper. Press chicken into nuts. Heat 1 Tbsp. of oil in skillet and cook coated breasts 2 min. per side. Place breasts in baking dish and bake for 15 min. or until a thermometer inserted in thickest portion registers 160 deg. F and juices run clear.

Heat remaining Tbsp of oil in nonstick skillet over high heat. Add diced onion, 1/4 tsp. salt and pinch of pepper. Cook until onion browned.

Line 4 serving plates with lettuce. Slice chicken breasts and arrange 1 breast on top of lettuce on each plate. Serve with dressing.

Dressing: Puree onion, avocado, oil, lime juice, water in blender.

481 cal. per serving, 33 g protein, 13 g carbs, 34 g fat, 5 g sat fat, 520 mg sodium, 70 mg cholesterol, 5 gm fiber.
