| Phase 1 has gone really well - I am truly amazing myself by the fact that I can do this. LOL My main question is - since we are supposed to start slowly with adding whole grains/fruits back in, what did you add in first, and what meal did you start with? I am thinking maybe I would like to start with breakfast, maybe adding in a while grain english muffin or a piece of fruit since eggs daily are wearing on me - LOL. Any brands of english muffins that are good out there? Also, can you believe that the start of Phase 2 is also the start of my PERIOD?!?! UGH! So I am not sure what in the world the scale is going to - I think I am just going to lock it in the closet for a week starting Saturday night! thanks! Kim

| Congrats Start slowy adding fruit and starches back in. I added one per week. Watch those serving sizes carefully too. 1 whole wheat english muffin = 2 servings. Since I knew I couldn't eat 1/2 of one I started with Uncle Sam cereal. I was totally egg'd out.. and the cereal was convenient for work. What I usually do is put a container of fat free yogurt in a little plastic container, and fill the rest (it's a small container!) with Uncle Sam. Sometimes I'll put fruit (like blueberries) on the bottom. Later on I added the occasional whole wheat english muffin (I keep them frozen so I'm not rushing to use them before they go bad). I also got some whole wheat tortillas that were really good. I made some Jambalaya with brown rice that came out great. I'm just finishing up my 3rd week in Phase II so that's it for what I've played with. Phase I must have really helped with the cravings.. since I just don't seem to be having them. Good Luck! | Hooray! Breakfast was my favorite part of switching to phase 2. I started with a piece of whole wheat bread with sugar free jelly and a tiny bit of smart balance. They recommend that you don't eat fruit first thing, I think, but I added apples the next week as my mid-morning snack (which is probably still too early, but didn't cause me any problems). Good luck on your first phase 2 week!

| I've never found an English Muffin that completely fits the guidelines. Most are a bit low on the fiber per serving. I think the nutritionists say those would be OK for an occasional starch. I wouldn't try that, though, until I had Phase 2 established. Someone here in the last 2 weeks talked about an English Muffin that they special order with the store manager. (Maybe it was Thomas' Multigrain.?? You could probably find that post.) I've read Dr. A. say that oatmeal or apple are low in the glycemic index & would be good choices to start with. Those work well for me. I started with oatmeal for breakfast. It's still my favorite. Uncle Sam's works well for me too. For me, bread products aren't very safe. Apples are the safest fruit for me, at lunch or dinner. Again, go slow. Enjoy your new food! And Congratulations! | ||||||||||
