Sounds like a solid plan French. And believe it or not dark chocolate is allowed on Phase 2! But not until you are further down the road and have adjusted to Phase 2. Also, it is next to impossible to find a dark chocolate with only 3 grams of sugar in it. So here's what I do:

Buy a bar of the unsweetened Baker's brand dark chocolate. Melt it for 1 minute then stir in a 1/3 cup of granular splenda and maybe some roasted nuts of your choice. Nuke it for another minute. Stir till melted. Then pour the entire glob onto wax paper on a cookie sheet. Spread it thin with a spatula and put it in the freezer for 15 minutes. Then you break up the chocolate into 1" bite size pieces. 3 bite size pieces is a serving.

NOW HERE'S THE CATCH: It tastes SOOO good that you will be very tempted to eat more than your serving. I had to give up making it because it is so hard to stick to the serving sizes so I CAUTION you not to over do it or you will derail your self. Best thing to do is package these baby's up into individual serving zip locks and see if you can stick to the portions. If not, GIVE IT UP!!

I found my self gaining back some weight because I over did it. But I will definitely try it again when I am more in control. One serving with a glass of red wine is sheer heaven!

I've done that myself and it's good. One time I didn't put the nuts in. Instead I put in a few drops of peppermint extract. That's good. I'm thinking that next time I might try making some little coconut stacks with this unsweetened coconut I bought from Netrition.

Welcome to phase two, French!
