Default What's for dinner everyone?

Anyone care to share what they had or are having for dinner? I thought this might give others ideas about what we eat!!

I had ground turkey mixed with black beans, salsa and light sour cream. Salad w/3 cheese dressing (light of course). Thinking about a SF Fudgesicle soon....

I post my food in my blog every day. I plan my meals out the night before. It's a big help for me. Tonight for dinner I had roast beef, cauliflower, green beans, 3 oz. sweet potato (I have a digital food scale), and 1 T. olive butter. (Olive butter is a concoction I make of my own. It's equal parts olive oil and butter. I take a stick of butter and let it get to room temperature and add 4 oz. of olive oil, then blend it with my hand blender. I keep it refrigerated because otherwise it is pretty runny. But it softens up very quickly once taken out of the fridge for easy spreading. It's my answer to Olivio!) I will be having a fudgesicle (or two, if I want a second after the first) in just a few minutes.

Dh brought pizza home for him and the kids but I had a rottisserie chicken 4oz on spring greens with tomatoes, whole grain croutons(just about 2 tbs) and slivered almonds with balsamic vinegar. It was delish. I really do not crave the pizza at all. Jilly you made me wanting those sf fudge bars I have in the freezer so I'm heading there right now.

Default wednesday spaghetti night for the kids

we have whole wheat pasta and turkey sausage in the sauce. But i didn't partake. Still trying to break the plateau. I have had a glass of red wine however. And i need to find something beachy for dinner...

yesterday i made a wonderful south beach soup with just a couple ingredients from the pantry:

one can black beans rinsed and drained
one half can of chicken broth
one half to one cup of salsa (fresh or jarred)

heat together until boiling, then simmer hard for 15 minutes

puree in blender
serve over scoop of non fat plain greek yogurt and sprinkle liberally with SPIKE--(my favorite seasoning blend)
it was delicious and my husband loved it too

Last night I was on my own, grabbing a quick bite before I was off to my yoga class for the evening. Just threw a bowl of leftovers together of brown rice, chicken and broccoli and cauliflower. Didn't get my 2 full cups of veggies, but I cover the 4.5 cups easy at lunch with my large salads anyway.

Tonight I think is pasta night. A small portion of ww pasta along with a lot of sauteed zucchini and either sauteed shrimp or scallops for the protein. I'd love to make up the large batches of meat sauce I used to make, but one daugther is vegetarian and will eat fish, so if we stick to the shrimp/scallop options then everyone can eat it and she doesn't need a separate sauce.

I threw together stuffed chicken breasts again....I love these...

slice of turkey bacon inside a boneless skinless breast, along with mushrooms, onions, jalapenios...(or whatever your heart desires)...close the breast up best as possible (I use a toothpick if needed).....smother with mozz. cheese & drizzle w/EVOO & seasonings you like...throw it in the oven!

mmm....i packed leftovers for lunch and can't wait to eat them!!!

Tonight is Taco Salad Night....mmmmm....can't wait for that either!...lol
