What Low Carbing Taught Me About Grains It took being on a low carb diet, where I avoided all flour, breads, pasta, rice and other grains to really make me appreciate quality, whole grains.
Before low carbing, if you would have asked me to eat some brown rice or whole wheat bread or other whole grains, I would have turned my nose up at it and tell you they didn't taste as good as my white bread, white rice or regular spaghetti noodles.
But since low carbing rid my body of sugar and white flour and I stayed away from these foods for so long, I've forgotten how little flavor these foods really have. In fact, I really used to use them to absorb the flavors from the foods and sauces I ate them with.
But now on South Beach, grains, breads, pastas have re-entered my life. And now I can really appreciate the texture and flavors of whole grains. They are awesome and so tasty!!!
So I thank low carbing - (for me it was Atkins), for keeping me away from grains for so long, that I now have an amazing and healthy appreciation for them on South Beach. And because I had to stay away from them for so long, putting them back into my diet feels like such a luxury that I feel I am eating a diet fit for royalty!!!!!!!! |
